Ingredients
3 large ripe bananas
2 large eggs
1½ cups self-rising flour
½ cup granulated sugar
Instructions
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
In a large bowl, mash the bananas until smooth.
Add the eggs and mix until fully incorporated.
Stir in the sugar, then gently fold in the self-rising flour. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use extra-ripe bananas for the best flavor and moisture.
Optional add-ins: chocolate chips, cinnamon, or chopped nuts.
Store at room temperature for 2–3 days or freeze slices for up to 2 months.
