1 cup rolled or quick oats
Instructions
- Set your oven to 350°F (175°C) and prepare a small loaf pan by greasing it or lining it with parchment paper.
- Peel and mash the bananas in a large bowl until mostly smooth, leaving some small bits if you like texture.
- Crack in the eggs (or stir in yogurt if using that) and whisk together with the mashed bananas until the mixture is smooth.
- Add the oats and mix thoroughly until the batter is well blended. Let it sit briefly—around 5 minutes—if you want the oats to soften slightly.
- Pour the batter into your prepared loaf pan and spread it evenly.
- Bake for 25 to 30 minutes. You’ll know it’s ready when the top is golden and a toothpick inserted in the center comes out clean.
- Remove from the oven and let the loaf cool in the pan for 10 minutes before transferring it to a cooling rack.
- Once fully cooled, slice and enjoy. Store leftover slices in an airtight container at room temperature, in the fridge, or freeze for longer storage.
